Frog Eye Salad

Ingredients:
1 cup sugar
2 tablespoons flour
2 1/2 teaspoons salt
1 3/4 cups pineapple juice
2 eggs, beaten
1 tablespoon lemon juice
3 quarts of water
1 tablespoon cooking oil
3 (11 oz) cans of Mandarin oranges, drained
2 (20 oz) cans of pineapple chunks, drained
1 (20 oz) can of crushed pineapple, drained
1 (9 oz) tub of cool whip
1 cup of mini marshmallows
1 cup of shredded coconut
1 (16 oz) package of acini de pepe

Combine sugar, flour, and 1/2 teaspoon of salt. Gradually stir in pineapple juice and eggs. Cook over moderate heat, stirring until thick. Add lemon juice. Cool to room temperature. Bring water, remaining 2 teaspoons of salt, and oil to boil. Add acini de pepe. Cook at a rolling boil until done. Drain; rinse with water. Cool to room temperature. Combine egg mixture and acini de pepe. Mix lightly, but thoroughly. Refrigerate overnight in an air tight container.

Add remaining ingredients. (Make sure to drain the fruit before adding it). Mix lightly. Refrigerate until chilled in an airtight container.

***This makes a ton- 25 servings!

Oreo Cookie Ice Cream Cake

Ingredients:
One pack of oreos (do not use double stuffed)
1/2 cube of butter
1/2 gallon of ice cream (any flavor)
1 jar of Mrs. Riches chocolate sauce
1 9oz tub of Cool Whip

Crush your entire package of oreos. Mix the crushed oreos with the 1/2 cube of butter together. Save 1/4 of your oreos for the topping. Press the other 3/4 of oreo crumbs to the bottom of a 9x13 inch pan.

Thaw out your ice cream a little bit, cut it into squares, and layer on top of the oreo crumbs. Push down, smooth out, and freeze for 10 to 15 minutes.

Then, pour Mrs. Riches chocolate topping on the top. Freeze for another 15 minutes.

Add the cool whip and then sprinkle the left over oreo crumbs.

Cheesy Potatoes

These are yummy and can be a great sidedish do any meal!
We love to have them with yummy porkchops!

Ingredients:
*1 (2lb) Bag Frozen Shredded Diced Potatoes
*1 Can Cream Of Chicken Soup
*1 Stick Of Butter (melted)
*1 (16oz) Carton Sour Cream
*16oz Cheddar Cheese, Shredded
*Salt And Pepper To Taste

Mix all ingredients together, adding potatoes last.
Put in a 9x13inch baking dish.
Bake at 375 degrees for 1 1/2 hours, stirring occassionally.
(I usually stir about every 15-20 minutes)

Sticky Chicken

Sorry for the lack of recipes on my end!! :(

STICKY CHICKEN

This is one recipe that I can make in a matter of minutes when I lack the motivation or time to make dinner.
I'm pretty sure its one of my husbands favorite dinners too.

INGREDIENTS:
*1 1/2 LB Chicken, Raw & Cubed
*1 Cup Apricot Jam
*1 Cup Catalina Dressing
*1 Envelope of Dry Onion Soup Mix

Cook chicken in skillet untill no longer pink.
In a small bowl combine jam, dressing and soup mix. Mix together.
Pour over chicken.
Bring to boil then simmer for 15-20 minutes.
Serve over rice

Best part about this meal... you will have enough jam, dressing and dry onion soup mix (comes with 2 envelopes in the box) left over to make it again the following week :)
Not too shabby if you ask me!

Homemade Spaghetti Sauce

Ingredients:
1 lb ground beef (optional)
2 cans canned tomatoes
1 can (small) tomato juice
1 can (small) tomato paste
1 small onion diced
3-4 cloves garlic, minced
1 t. basil
1 t. parsley
1 t. oregano
1/2 t. marjoram
1/4 c. brown sugar

*This makes a lot. Will serve 8-10 people.


First, brown ground beef. Drain meat and discard extra fat from pan. After drained, put meat back in pan.

Add all other ingredients and mix together. At this point, spaghetti sauce will be extremely runny and look kind of weird. This is normal. Turn heat up to medium and let come to a boil.
Reduce heat to medium-low and let simmer, stirring occasionally, for 30-60 minutes. The longer you let it simmer the thicker it will be.
Serve over cooked spaghetti noodles and enjoy!

Sugar Cookies

These are my favorite ever sugar cookies. I love them. They have a special secret ingredient that makes them delicious!

Cream together:
1 c. butter, softened
1 c. powdered sugar I know it sounds weird but it works!
1 1/2 c. sugar
Add:
1 c. oil I skipped on the oil today and they were still really good.
2 eggs
1 t. vanilla
1 t. almond extract *special secret ingredient*
Mix in:
1 t. cream of tarter
1 t. salt
1 t. baking soda
5 c. flour

Roll into golf ball sized balls (I used my melon baller) and place on cookie sheets. Flatten with bottom of a glass dipped in sugar. Bake at 350 for 10-15 minutes. (If they are brown on top, that means it is burnt.
When completely cool, frost.

Frosting:
2-2 1/2 c. powdered sugar
1/2 c. oil Once again. Sounds weird, but good.
2 t. almond extract *Special secret ingredient*
3-4 T. milk
Coloring

Mix adding powdered sugar and milk until desired consistency is achieved.

Mexican Rice

Well this post is really overdue... I've been meaning to post some recipes on here forever!  I have some good ones to share but for now this will have to do.  I found this yummy rice for EASY Mexican Rice to put in our tacos tonight and it was pretty dang good.  Sorry I don't have a picture... we ate it all!

3 T. vegetable oil
1 cup uncooked long grain rice
1 tsp garlic salt
1/2 tsp ground cumin
1/4 cup chopped onion
1/2 tomato sauce
2 cups chicken broth

Heat oil in pan.  Add rice and cook over medium heat until golden and puffed.  Stir constantly, adding salt and cumin.  Stir in onion and cook until tender.  Stir in tomato sauce and chicken broth; bring to a boil.  Reduce heat to low and simemr 20-25 minutes.  Fluff with a fork and serve.  Enjoy!
