As I was struggling the other day trying to think of something to make for dinner my friend recommended I try this and after trying I am now a HUGE fan! It is delicious and super simple. Not to mention you can make many different variations of it.
Sorry no pictures..I'm always a slacker on that one. Next time I make this if I remember I will take a picture and post it.
Chicken with Scalloped Potatoes Casserole
Wash and peel your potatoes (I used 4)
Slice your potatoes as thin as you can (the thinner they are the quicker they cook)
Place them in your pyrex baking dish (grease the dish first, of course!)
I then cut up 2 whole chicken breasts into smaller pieces (we like it bite-size rather than a big chunk of breast)
Place on top of the potatoes then season with salt and pepper.
In a separate dish mix whatever cream of soups you like/want. I used 1 can cream of mushroom and 1 can cream of chicken.
Add a cup of milk and mix well then pour over top of the chicken and potatoes in the baking dish.
Bake at 350 degrees for approx 1 hour.
Hope you enjoy this dish as much as we did!
The variations you can make are the types of soup you use or instead of chicken you can use pork chops or instead of potatoes you can use rice! I have to admit this is my new favorite home cooked meal!

Creamy Mashed Potatoes
Ingredients:
4 medium potatoes, peeled and cubed
2 tablespoons of butter, softened
1 tablespoon of milk
3 ounces of cream cheese, softened
salt
garlic powder
Steps:
1. Place potatoes in a sauce pan and cover with water.
2. Add 1 teaspoon of salt and boil gently until the potatoes are tender.
3. Drain the potatoes and return to the sauce pan.
4. Add butter, milk and cream cheese to the potatoes.
5. Mash until fluffy.
6. Flavor with salt and garlic powder to taste.
These will keep well in the fridge for a few days or can be frozen. I will usually double or triple the recipe and then freeze them so we can have homemade mashed potatoes whenever!

Cheesy Potatoes
These are yummy and can be a great sidedish do any meal!
We love to have them with yummy porkchops!
Ingredients:
*1 (2lb) Bag Frozen Shredded Diced Potatoes
*1 Can Cream Of Chicken Soup
*1 Stick Of Butter (melted)
*1 (16oz) Carton Sour Cream
*16oz Cheddar Cheese, Shredded
*Salt And Pepper To Taste
Mix all ingredients together, adding potatoes last.
Put in a 9x13inch baking dish.
Bake at 375 degrees for 1 1/2 hours, stirring occassionally.
(I usually stir about every 15-20 minutes)

Stuffed Franks
Here's another recipe that adults and kids will enjoy... 



Ingredients:
*hot dogs/sausages
*mashed potatoes
*shredded cheese
(Any variety of the above can be used. Ex: for kids I use plain hot dogs, for adults I use brats and flavored potatoes)

Directions:
*Boil franks until heated through. Slice them length-wise, but not all the way through. Place the franks on a baking sheet (lined with foil for easy clean up).
*Spoon the potatoes onto the center of the franks.
*Put cheese on top of the potatoes.
*Broil until cheese is melted.

Seasoned Red Potatoes
These potatoes are SO delicious.. they are addicting.
The fact that they are super easy to throw together and take no time to cook makes them dangerous :)
INGREDIENTS:
12-14 small red potatoes
1/4 cup olive oil (I used vegetable oil)
1/4 cup butter, melted
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon dried basil
1/2 teaspoon dried thyme
1/2 teaspoon pepper
1. Peal a strip from around each potato.
Place the potatoes in an ungreased 3-qt baking dish.
In a small bowl, combine oil, butter and seasonings; drizzle over potatoes.
(I doubled the recipe so that there was extra to pour over the potatoes when we ate them to give them extra flavor)
2. Bake, uncovered at 350 Degrees for 50-55 minutes or until tender.
(I baked them for a hour)
Stir every 15 minutes.
And Ta-Da! Amazingly tasty pototoes :)
