Mexican Rice

Well this post is really overdue... I've been meaning to post some recipes on here forever!  I have some good ones to share but for now this will have to do.  I found this yummy rice for EASY Mexican Rice to put in our tacos tonight and it was pretty dang good.  Sorry I don't have a picture... we ate it all!

3 T. vegetable oil
1 cup uncooked long grain rice
1 tsp garlic salt
1/2 tsp ground cumin
1/4 cup chopped onion
1/2 tomato sauce
2 cups chicken broth

Heat oil in pan.  Add rice and cook over medium heat until golden and puffed.  Stir constantly, adding salt and cumin.  Stir in onion and cook until tender.  Stir in tomato sauce and chicken broth; bring to a boil.  Reduce heat to low and simemr 20-25 minutes.  Fluff with a fork and serve.  Enjoy!
